Under which deployment option do we specify the datastore to be used to store the virtual machines?

Can you clarify what you mean with “deployment option”? Are you looking on the UI of OpenNebula?

For Datastores management, I would suggest you to start from the documentation:
Datastores.
At the bottom you’ll find the section for Sunstone.
