Is it possible to use the Debian 11 OpenNebula packages on Debian 12? I’m mostly interested in the Hypervisor part. Sunstone et all can stay on Debian 11 for the time being.
Else, is there a timeframe for Debian 12 packages?

If you look at the repository then older versions do not get an upgrade. That means a new release has to come out for debian 12. For example 6.7 or something else, whatever they have planned next for the version major and minor.
We are already at version 6.8 and we do not have packages for Debian 12. Soon we will probably have Debian 13.
I think it is safe to say that OpenNebula will only be available with Ubuntu and Alma/Rocky/RHEL/etc.
The upcoming 6.10 version has packages for debian 12. Older versions currently supported will most likely not receive debian 12 packages.
Tried to install opennebula 6.8 on debian12.

opennebula-sunstone will not start

Community Edition supports Debian 12 from version 6.10.
You won’t be able to use it on 6.8, so my suggestion is to upgrade your OpenNebula system.
